The production of Jumbo Pistachio
Originally from Kerman province in Iran, Kaleh Ghochi (Jumbo) pistachio features a round and delicious kernel protected with a light cream shell. This well-known pistachio has a history of more than 4000 years in the region. The round shape of this pistachio reminded local people of the head of Iranian domestic sheep. Therefore, they named it “Kaleh Ghochi.”
The warm days and cool nights of the desert, along with the rich soils of cities in central Iran, make a perfect condition for growing Jumbo pistachio, the most delicious one across the world. Iranian pistachio growers raise the small trees of Jumbo pistachio with great care. Since pistachio trees are susceptible to cold weather, they must be protected to have the standard size at harvest. The harvest time depends on the city and takes place from mid-September to last October.

Processing and Packing Jumbo Pistachio
One of the most critically essential steps for producing great tasting pistachios is processing. After harvesting Jumbo pistachios, we use either natural or mechanical processing methods to dry pistachios and open their shells. In the natural processing method, pistachios shells crack naturally. Jumbo Pistachio with Large Kernels become very big before harvest; thus, their bodies break when they are still on the trees. We use special machines to crack the shells for those pistachios with closed surfaces without damaging the kernels.
Pistachios are fragile products. To protect them from various contamination kinds, we pack them properly in 25 and 50 kg packages. Each kilogram of Jumbo pistachio contains approximately 700 to 800 pistachios. Mahuk’s packages of pistachios can be customized to meet our clients’ requirements.
