The light color of saffron’s stem shows that it has been dried in a standard environment and the colorific qualities are much better. usually the abnormal dark colors of saffron are caused by two factors;
A) Disregarding standardize factors in drying process.
B) Since the harvest time is in cold season saffron’s flowers might get Frost injury so the stems get darker.
